Ss61 Steel Metal Cap Series

This is a knife for people (professionals) who are not satisfied with the sharpness of regular stainless steel knives.
Hardness of 60-61HRC for long-lasting cutting. It is also relatively easy to sharpen, so I recommend this knife to those who are able to clean it frequently.
The downside is that it is prone to rusting, so you need to make sure to wipe it down frequently.

The metal cap will prevent water from entering the handle.
This makes it more hygienic to use and the handle last longer.
